Acetic Essence
It is used in food industry to produce E260 acetic acid solution, which can be employed for the following:
- to prepare a marinade of 4-7% concentration to obtain the semi-products in the process of cold fish marinade production (on the condition that E260 acetic acid obtained form the acetic essence is not used in flavoured pickles for ready-to-eat products),
- as an additional substance in food (an acidifying substance), to produce flavoured mayonnaises, flavoured mustards, and fish, fruit, vegetable preserves, with the exception of fungi preserves.
